Back in 1810, Jimmy McCurry was an average college student destined to run the family’s sheep farm after graduation. One fateful day his course in life changed when he heard via his social network – the guys down at the pub – that Argentina was battling for independence. That sounded more exciting than Farm Economics 101, so off he went. Once there, he joined up with General Belgrano’s forces. The battles were tough, but not as tough as the steaks the guys ate. So Jimmy, or “Chimi” as he was called by the Argentines with their Spanish accents, began tinkering with parsley and olive oil, coming up with a green sauce the troops called “salsa de chimichurri.” Ever since, Argentina has claimed chimichurri as its own.
